Beignets

Ingredients
  

  • 3/4 cup warm water
  • 1.25 tsp active yeast
  • 1/3 cup castor sugar
  • 1/2 cup whole milk
  • 1 egg, lightly beaten**
  • pinch salt
  • 3.5 cups all-purpose flour
  • 2 tbsp butter
  • vegetable oil for frying

Instructions
 

  • In a bowl, add the warm water. Dissolve the yeast and sugar, and cover it.  Let it sit for 15-20 minutes; it should turn foamy.
  • Whisk in the milk, egg and salt. 
  • Add in half the flour and mix well. 
  • Add the butter, and then the rest of the flour.
  • Knead the dough for 5-7 minutes
  • Shape the dough into a bowl, and keep it in a large, greased bowl. Cover the bowl with cling wrap and let the dough rise for 2 hours.       
  • After 2 hours, the dough should've doubled in size.       
  • Preheat the vegetable oil for deep frying the beignets
  • Roll out the dough to about 1/4 inch thick. Using a knife or a pizza slicer, cut out squares of roughly 3 inches
  • Fry the square beignets for about 3 minutes on each side, until they puff up and turn golden brown
  • After removing them from the oil, dry the excess oil with tissue paper.
  • Serve hot, with a heavy dusting of powdered sugar on top. 

Notes

**you can replace the egg in this recipe with 1/4 cup of yogurt
