Ingredients
3/4
cup
warm water
1.25
tsp
active yeast
1/3
cup
castor sugar
1/2
cup
whole milk
1
egg, lightly beaten**
pinch
salt
3.5
cups
all-purpose flour
2
tbsp
butter
vegetable oil for frying
Instructions
In a bowl, add the warm water. Dissolve the yeast and sugar, and cover it. Let it sit for 15-20 minutes; it should turn foamy.
Whisk in the milk, egg and salt.
Add in half the flour and mix well.
Add the butter, and then the rest of the flour.
Knead the dough for 5-7 minutes
Shape the dough into a bowl, and keep it in a large, greased bowl. Cover the bowl with cling wrap and let the dough rise for 2 hours.
After 2 hours, the dough should've doubled in size.
Preheat the vegetable oil for deep frying the beignets
Roll out the dough to about 1/4 inch thick. Using a knife or a pizza slicer, cut out squares of roughly 3 inches
Fry the square beignets for about 3 minutes on each side, until they puff up and turn golden brown
After removing them from the oil, dry the excess oil with tissue paper.
Serve hot, with a heavy dusting of powdered sugar on top.
Notes
**you can replace the egg in this recipe with 1/4 cup of yogurt
