Hazelnut biscottis

  • 1.25 cups all-purpose flour
  • 1/2 tsp baking soda
  • 3 eggs [1 for egg wash]
  • 3/4 cup castor sugar
  • handful of chopped hazelnuts
  • pinch salt
  • chocolate chips [optional]


  • Preheat the oven to 180ÂșC and like your baking tray with parchment paper. 
  • In a bowl, whisk together the flour, baking soda and chopped hazelnuts
  • In a separate large bowl, beat the eggs and sugar, using an electric hand beater, until it becomes a pale yellow colour, and increases in volume. (it will take about 5-7 minutes)
  • Now, fold in the flour mixture until well combined. you will get a gluey,sticky dough, which will not hold shape.
  • Divide the batter into 2, and dust your work surface with flour
  • Using your hands and flour, form 2 logs.
  • Brush with egg
  • Bake for 20 minutes
  • Take it out of the oven, and let it cool for 15 minutes
  • Cut into pieces as shown in the picture
  • Place the biscottis on a baking rack, and cook for another 15-18 minutes.
  • Serve with milk
