Preheat the oven to 180ºC and like your baking tray with parchment paper.
In a bowl, whisk together the flour, baking soda and chopped hazelnuts
In a separate large bowl, beat the eggs and sugar, using an electric hand beater, until it becomes a pale yellow colour, and increases in volume. (it will take about 5-7 minutes)
Now, fold in the flour mixture until well combined. you will get a gluey,sticky dough, which will not hold shape.
Divide the batter into 2, and dust your work surface with flour
Using your hands and flour, form 2 logs.
Brush with egg
Bake for 20 minutes
Take it out of the oven, and let it cool for 15 minutes
Cut into pieces as shown in the picture
Place the biscottis on a baking rack, and cook for another 15-18 minutes.
Serve with milk
